Breakfast

Okay, so breakfast can be tricky for someone who cannot eat eggs or dairy, especially if you want to out eat. I always have some of these in the freezer especially if my son is not cooperating in the AM. I am a single mom and sometimes breakfast does happen in the car.

Pumpkin Pancakes
These Pumpkin Pancakes are so, so yummy. Now, I used to love buttermilk pancakes but after making these I don't think I will ever go back.

1 cup wheat flour (I use organic)
1 teaspoon baking powder
1 teaspoon baking soda
1 Pinch salt
1/2 cup soy milk (or rice milk)
1 tablespoon apple cider vinegar
1/2 cup water
2 tablespoons canned pumpkin (don't despair, the extra can be used for pumpkin cupcakes)
3/4 tablespoon cinnamon
1/2 vanilla extract
1 tablespoon honey
non-stick cooking spray

1. Place all of the dry ingredients in a bowl.
2. In a measuring cup add soymilk and apple cider vinegar together. Let this mixture rest for a few minutes so the milk begins to curdle a little bit.
3. Add all of the wet ingredients to the dry mixture.
4. Cook pancakes on medium-low heat for about 2 minutes on each side.

I serve these with a non-dairy butter and honey.

"French Toast"
1. Any dairy/egg free wheat bread.
2. Coat both sides with a non-dairy butter like, Earth's Balance.(http://www.earthbalancenatural.com/#/products/organic/)
3. Lightly dip in a little vanilla soy or rice milk.
4. Sprinkle with a little bit of cinnamon.
5. Spray a skillet with a little non-stick cooking spray and cook until slightly brown.


Van's Blueberry Waffles
These are very tasty and can be found at most Giant stores around the Philadelphia area. Since my son is in daycare, I usually pack this for his lunch once a week with soy pudding for a treat day and break from sandwich making.
